Dear customers
It was a funny week this week and most of the loaves didnt turn out at all as I was expecting. My regular flour arrived in a bag with a different colour which made my heart skip a beat (flour bags are colourcoded so first thought was I ordered the wrong flour which would be very bad news). I need to double check with the mill what exactly is going on with this flour and ask for gluten content but it makes for very limp loaves. So, sorry if your WW in particular were very flat last week, that's what happened. It's either the flour or my levain which hadnt been given much exercise during the 2-week break. Anyway next week is the last week before a 4w break. I've decided to take the rest of August off after all as my other job is really, really busy and as some of you know, I volunteer at a local youth club and I've got more work to do on all fronts that I can manage. I'll be back baking in the week following the bank holiday so week c/o 06/09/2021. Next week we will have: PdC (standard and large), Pan Marino, 3-grain (both only come in standard size), Rugbrod (half or whole), Challah and my Cornish Saffron Bread. STANDING ORDER, NO INVOICE: With one weekly bake it's easier to cater for regular set orders so if you wanted to order eg 2 basic breads every week (one PdC, one WW, or two of each), or two large ones, then you could do that and go on a weekly standing order. No need to order, the breads arrive every week, I still keep a tab for you to make sure what you pay cover for your orders and that you dont pay too much (I'll go on holiday and so will you). As someone who knows me well told me last week "you didnt think it'd be easy did you?" and indeed it's not but it is good and it'll work. We will be running an extended menu for the run-up to the Easter weekend with bread and sweet treats on Wed, Thu and (good) Friday. No bake on Saturday nor in the following week. First bake back will be in week c/o 12 April. ***There will be an update on West Street Bakehouse during the week of Easter Monday (our week off) as the way we operate the business will change when we are back on Thu 15 April*** But for this week, Wed 31 Mar – Fri 2 April, this is what we'll have (see links below the table for a description of each bread and ingredient lists): order deadline Monday 5PM WW, PdC, Pan marino, Walnut, 3-grain, Lemon & barley, Turmeric etc, Chocolate, Challah. Cinnamon swirls: £3 for 4 swirls 220g total; with pecan nuts £3.50 for 4. Ingredients (allergens): wheat flour, milk, water, eggs, butter, honey, sugar, yeast, salt, cardamom, cinnamon, pecan nuts (optional). I ran the Gruyère & olive bread at Xmas 2017 but didnt take a picture of my own so the below right photo comes from my school recipe folder. It's a tear & share yeasted bread baked in a 1lbs loaf pan which is good for picnic or as a quick lunch with a green salad (£5 per loaf). I have loved offering specials most weeks since the start of 2021. It's been a great way to keep boredom at bay (mine and hopefully yours) and engage with you, my dear customers! It has encouraged me to try new things and be adventurous, which in turns makes me a more confident and rounded baker. Lessons learned in the bakery transpose well in life, one could say. Anyway no risk of a rut this week with 24 challahs baked on top of the normal sourdough output and a total of 70+ products coming out of the oven. This week's special was a simple idea suggested by a customer (danke schoen), I hope you'll like it. Because it's using a variant of an existing recipe I can offer it on all baking days. Thursday: Wild West (standard and large size) and seeded Wild West (standard only), Rugbrod (half and whole). Honey available with all bread orders (3 pots left, 2 runny, 1 set, do say which you want). Hello everyone It was another interesting week coming on the heels of the previous one. I would like to apologise to my collecting customers this morning if I seemed distrated whilst I was waiting for a visit of the food inspector, NO LESS! All went well with said visit, which pleased me greatly although not as much as seeing the beautiful challah come out my oven on Friday and Saturday. Those of you who have known me for some time also know that the simple and understated challah is a bake that had so far eluded me. So it was no small victory when I managed to nail it and add it to this week's menu. I wont call it a special as I've already decided to add it to my Treats menu. Thursday: Pain de Campagne and Rugbrod in standard/half and large/full size. Friday: as Tuesday, Wild West, Pan Marino, Raisin & Rosemary and Challah! It was an eventful week last week when all I could think about and talk about was cinnamon swirls. I'm glad I made them and I'm working on another yeasted treat but this week we are back with a bready special. It's back to school as well and I'm sure the week has lots in store for us folks with school-aged children! Thursday: Wild West in standard and large size, Wild West Heritage with Khorasan flour (standard only), Rugbrod in half and full loaf. Friday & Saturday: as Thursday (Wild West in large only) plus Pain de Campagne (large only), Barley & Ale, NYDR and the special is an omega-3 loaded Chia & Linseed levain (£3 for a standard loaf) as shown on photos below. It's a loaf that keeps well as it needs very high hydration because of the chias that act like little sponges. Sorry for lateness of menu this week I've been umming and ahhing too long about the special! The special will be sweet and a fusion recipe between a Scandinavian cardamom knot and a British cinnamon bun: my very own cinnamon swirls with freshly ground cardamom in the dough and cinnamon butter in the middle. Definitely a treat but not one that should send your sugar or cholesterol levels through the roof as it's not my kind of baking. Please try and enjoy on the day of baking as my swirls are best eaten fresh (if you keep overnight, do leave them in their bag). They contain butter and are not suitable for people with dairy allergies (obviously they also have wheat flour like the rest of the menu!). Thursday: Pain de Campagne (standard and large), Rugbrod (half and whole) and my cinnamon swirls (£1.75 for 2 OR £3 for 4; one bun weighs about 55g), see picture below. Friday: Pain de Campagne and Wild West (both in large size only), Rugbrod (half and whole), Black & white sesame, Walnut bread and my cinnamon swirls (see Thursday for prices and quantities). At a bit of a short notice, I've decided to take next week off and rest & recover following a recent surge of work and stress on all sides. It is nothing that a week of doing other things won't set right and I'll be back with new specials and old friends in the second half of the term. Thanks again for a smashing week last week and one to remember. 64 loaves were baked which is the second highest week after one mad time in June 2020 (81 at the time). Next week will be very busy for me on the non-baking front so rather than skip baking altogether I've opted for a very simple menu of my three basic loaces. Thursday: Wild West and Rugbrod in standard/half and large/whole sizes. Friday & Saturday: as Thursday plus Pain de Campagne in standard/half and large/whole sizes. I hope you have kept well and safe for another week. It was a good few days in the bakery especially on Friday when I, for once, did not try to hurry my bake along. The sourdough loaves were left plenty of time to finish proving before being whisked in the oven. Same thing with the Cornish which were mixed by 930AM but only baked 6 hours later. This freed up my morning and resulted in bigger and plumper loaves so good result all around! Here is the menu for week commencing on 1 February 2021. Please order by Monday 5PM. Thursday: Pain de Campagne (small or large) and Rugbrod (half or full). Friday & Saturday: as Thursday with PdC in large only, Wild West (also large only), NYDR, Chocolate & Hazelnut and the special this week is the very herby Tahina & Za'atar levain. Friday only: my Cornish saffron bread. I will run my yeasted treats once a month only (Cornish Saffron alternated with Lincs plum bread) until further notice so grab that one if you like it! Just a quick word on your paper bags: some of our you might have seen I used recycled paper bags for this week's deliveries (you would only have got one of YOUR old bags not somone else's just to be clear!). I'm not changing tack on the paper bags so please dont see this as a sign that you need to start returning your bags with the next delivery. I did it this week to buy myself a bit of time as I'm coming near the end of my current stash of bags. The re-used bags you had this week havent been touched in months so pose NO covid risks and this is why I thought it was OK to use them. But it's not time to go back to full recycling mode quite yet so please use your bags at home and put them in your compost bin when you are done with them. I'm still looking for a better solution including using personal canvas bags for all willing customers but that might need to wait after covid. Have a great week, Emma & Jules x |
