Bread menu next week - 4w holiday after that

Dear customers

It was a funny week this week and most of the loaves didnt turn out at all as I was expecting. My regular flour arrived in a bag with a different colour which made my heart skip a beat (flour bags are colourcoded so first thought was I ordered the wrong flour which would be very bad news). I need to double check with the mill what exactly is going on with this flour and ask for gluten content but it makes for very limp loaves. So, sorry if your WW in particular were very flat last week, that's what happened. It's either the flour or my levain which hadnt been given much exercise during the 2-week break.

Anyway next week is the last week before a 4w break. I've decided to take the rest of August off after all as my other job is really, really busy and as some of you know, I volunteer at a local youth club and I've got more work to do on all fronts that I can manage. I'll be back baking in the week following the bank holiday so week c/o 06/09/2021.

Next week we will have: PdC (standard and large), Pan Marino, 3-grain (both only come in standard size), Rugbrod (half or whole), Challah and my Cornish Saffron Bread. Honey (set or runny) available with any bread order. Please order by Tuesday 5PM. 

Housekeeping:
  1. Tab customers: I will send invoices to all of you next week so watch out for that email. A few of you still pay me into my old bank account; I now bank with Starling so if in doubt, do ask!
  2. Customers on weekly standing orders: please let your next standing order go through and then cancel. Or postpone until September if you can do that.
  3. Prepay customers: business as usual!

If I dont hear or see some of you before my break, have a great month of August and I'll look forward to seeing you in September.

Hello everyone and welcome to fresh local bread again!

This Friday we will have: Wild West and Pain de Campagne, Pan Marino, Rugbrod and Cinnamon swirls. Most of these come in two sizes so do say which you want!

All Comberton orders above £6 in value will be delivered; all other orders please come and collect at ours. I'll text you when ready.

I will bake again next week and will probably take another 4-week break after that. This summer is one of uncertainties (shall we, shant we go away?) so I'm afraid I have to play it be ear. People on standing order, if I do take a 4-week break I'll get in touch so that we can make appropriate arrangements with the £££s.

Dear customer, another change coming through as I'll be going down to ONE day per week from now on. Was going to in September anyway but the shambles with the seeded Wild West last week have made me realised I really need to concentrate one ONE thing at a time each day. So here goes:

FRIDAY: Wild West and seeded Wild West, Rugbrod (all come in two sizes so please specify which).
Fig&Fennel, Barley&Ale, NYDR and once again cinnamon swirls (either standard or larger for 50p more) because last week's were divine and we want more of them!

Please order by TUESDAY 5PM. If you are a prepay customer please also pay by then.

STANDING ORDER,  NO INVOICE: With one weekly bake it's easier to cater for regular set orders so if you wanted to order eg 2 basic breads every week (one PdC, one WW, or two of each), or two large ones, then you could do that and go on a weekly standing order. No need to order, the breads arrive every week, I still keep a tab for you to make sure what you pay cover for your orders and that you dont pay too much (I'll go on holiday and so will you). If you are interested in that then please let me know.

Dear all, we'll be having a super simple menu this week as there's lot of catchup to do after a week off. So...

Thursday & Friday: Wild West and Pain de Campagne in standard and large size, Rugbrod (half or full tin size), and my Lincs plum bread.
Friday only: Challah.
Honey available with any bread order, please specify set or runny.

Please order before Monday 5PM and prepay customers, please also pay by that date/time. All orders above £6 in value excluding honey will be delivered in Comberton, all other orders to be collected at our house on baking day (wait for my text to avoid a wasted journey).

Early notice: we will take a week or two off in July and a few weeks in August. In September, we will move to a once-a-week baking schedule to accomodate for an increase in my hours with my other job.

Hello hello and sorry for late menu this week! So happy to be typing tomorrow's date at the top of this post, it was a long time coming but here it is at least, Rule of 6 indoors welcome back!

Meanwhile, with ordering deadline still set to tomorrow Monday 5PM please, we will be baking:

Thursday & Friday: Wild West plain and seeded and Rugbrod in either standard or large size (half or full size for Rugbrod). I ordered some poppy seeds but they might not have arrived by the time I need them, in which case the seeded WW will be pumpkin+millet+sesame (allergen!).
Friday only: Challah, Fig & Fennel, Chocolate sourdough.

If you are new to us, please make sure you check the breads' ingredients for allergens. 

As usual, we will deliver orders in Comberton > £6. All other orders to be collected from our collection box on baking day, any time after you receive a text from me saying order ready. If you dont know it yet, I will give you our address after you have placed your order.

Friday only: Walnut (sorry some people get missed out last week!) and Olive & Rosemary.

We deliver orders of £6 or more to Comberton residents, all other orders to be collected please. I'll send you a text when your order is ready for collection and you can come to pick it up any time thereafter on that day. If you have not paid me yet, remember that my banking details changed at the start of April and I now bank with Starling. If in doubt, please ask me.

Please order by Monday 5PM and may I ask all prepay customers to pay for your order by Tuesday evening, I'm not putting a time but you get the idea. I dont really want to be chasing for payment and need to get going on Tuesday evening with the levains so need 100% certainty on quantities. Thank you!

I hope you enjoyed your bread last week. It was a good first week of the new regime and certainly a very full one. As someone who knows me well told me last week "you didnt think it'd be easy did you?" and indeed it's not but it is good and it'll work. Thank you to all of you for sticking with me, for the new collecting people who graciously came to pick up their breads! Thank you, thank you, thank you! Now for next week:

Thursday & Friday: Wild West Heritage (kamut) and seeded Wild West. Both in standard and, wait for it, large size, yay!!! £3.20 for standard and £4.30 for large but please do click on the link to check all ingredients will suit you and your loved ones! Rugbrod (half or whole loaf, £3/£6).

This is the menu for the first week of the new setup with bakes on Thursday and Friday only. Remember that we now only deliver orders over £6 in value in one drop, excluding honey. Comberton residents can still place smaller orders but will need to come and collect from our collection boxes at the front of our house (we'll give you the address if you dont know it already). Delivery by 6PM and collection from 5PM. We will text you when your order is ready for collection so do wait for our text to avoid a wasted journey.

We will be running an extended menu for the run-up to the Easter weekend with bread and sweet treats on Wed, Thu and (good) Friday. No bake on Saturday nor in the following week. First bake back will be in week c/o 12 April.

Cinnamon swirls: £3 for 4 swirls 220g total; with pecan nuts £3.50 for 4.
Ingredients (allergens): wheat flour, milk, water, eggs, butter, honey, sugar, yeast, salt, cardamom, cinnamon, pecan nuts (optional).

I ran the Gruyère & olive bread at Xmas 2017 but didnt take a picture of my own so the below right photo comes from my school recipe folder. It's a tear & share yeasted bread baked in a 1lbs loaf pan which is good for picnic or as a quick lunch with a green salad (£5 per loaf).
Ingredients (allergens): wheat flour, water, yeast, salt, gruyère, olives, sesame seeds, sunflower seeds, olive oil.

Evening all

I have loved offering specials most weeks since the start of 2021. It's been a great way to keep boredom at bay (mine and hopefully yours) and engage with you, my dear customers! It has encouraged me to try new things and be adventurous, which in turns makes me a more confident and rounded baker. Lessons learned in the bakery transpose well in life, one could say. Anyway no risk of a rut this week with 24 challahs baked on top of the normal sourdough output and a total of 70+ products coming out of the oven. This week's special was a simple idea suggested by a customer (danke schoen), I hope you'll like it. Because it's using a variant of an existing recipe I can offer it on all baking days.

Thursday: Wild West (standard and large size) and seeded Wild West (standard only), Rugbrod (half and whole).  Honey available with all bread orders (3 pots left, 2 runny, 1 set, do say which you want). 
Friday & Saturday: as Thursday plus Fig & Fennel, Poppy & sesame and (Friday only) my Cornish Saffron Bread.

Hello everyone

It was another interesting week coming on the heels of the previous one. I would like to apologise to my collecting customers this morning if I seemed distrated whilst I was waiting for a visit of the food inspector, NO LESS! All went well with said visit, which pleased me greatly although not as much as seeing the beautiful challah come out my oven on Friday and Saturday. Those of you who have known me for some time also know that the simple and understated challah is a bake that had so far eluded me. So it was no small victory when I managed to nail it and add it to this week's menu. I wont call it a special as I've already decided to add it to my Treats menu. 

Thursday: Pain de Campagne and Rugbrod in standard/half and large/full size.
Friday: as Tuesday, Wild West, Pan Marino, Raisin & Rosemary and Challah!
Saturday: as Friday but I can only take a max of 4 orders for Challah on Saturday.
Honey available with every bread order stock permitting (5 jars left).

So much fun making challah on Friday. 17 on order +1 spare worked out as 3 x batches of 6. Batch # 1 was out of the mixer at 8:30AM but I didnt get batches # 2 and # 3 sorted out before 11:30AM and 1:00PM. Bakery was fairly warm by then which sped up the proving so that all challah work was done and dusted by 420PM. Kudos to Jules for delivering all those unyieldy loaves without spoiling them.

Dear all

It was an eventful week last week when all I could think about and talk about was cinnamon swirls. I'm glad I made them and I'm working on another yeasted treat but this week we are back with a bready special. It's back to school as well and I'm sure the week has lots in store for us folks with school-aged children!

Thursday: Wild West in standard and large size, Wild West Heritage with Khorasan flour (standard only), Rugbrod in half and full loaf.
Friday & Saturday: as Thursday (Wild West in large only) plus Pain de Campagne (large only), Barley & Ale, NYDR and the special is an omega-3 loaded Chia & Linseed levain (£3 for a standard loaf) as shown on photos below. It's a loaf that keeps well as it needs very high hydration because of the chias that act like little sponges.
Honey available with every bread order.

Dear All

Sorry for lateness of menu this week I've been umming and ahhing too long about the special!

The special will be sweet and a fusion recipe between a Scandinavian cardamom knot and a British cinnamon bun: my very own cinnamon swirls with freshly ground cardamom in the dough and cinnamon butter in the middle. Definitely a treat but not one that should send your sugar or cholesterol levels through the roof as it's not my kind of baking. Please try and enjoy on the day of baking as my swirls are best eaten fresh (if you keep overnight, do leave them in their bag). They contain butter and are not suitable for people with dairy allergies (obviously they also have wheat flour like the rest of the menu!). 

Thursday: Pain de Campagne (standard and large), Rugbrod (half and whole) and my cinnamon swirls (£1.75 for 2 OR £3 for 4; one bun weighs about 55g), see picture below.
Friday: Pain de Campagne and Wild West (both in large size only), Rugbrod (half and whole), Black & white sesame, Walnut bread and my cinnamon swirls (see Thursday for prices and quantities).
Saturday: as Friday but no cinnamon swirls (sorry!). 

Looking forward to the week and eating cinnamon swirls in the spring sun with a cup of coffee!

Week c/o 15 February: no baking this week

Dear customers,

At a bit of a short notice, I've decided to take next week off and rest & recover following a recent surge of work and stress on all sides. It is nothing that a week of doing other things won't set right and I'll be back with new specials and old friends in the second half of the term. 

Following last week's poll, the Turmeric bread will make it to the regular list of breads. Thank you for your 20 responses and/or feedback emails if you hadnt had any of the specials. I always value customer feedback, your serving suggestions etc, so please feel free to let me know what you think at any time. Email's always best!

Hello All,

Thanks again for a smashing week last week and one to remember. 64 loaves were baked which is the second highest week after one mad time in June 2020 (81 at the time). 

Next week will be very busy for me on the non-baking front so rather than skip baking altogether I've opted for a very simple menu of my three basic loaces.

Thursday: Wild West and Rugbrod in standard/half and large/whole sizes.
Friday & Saturday: as Thursday plus Pain de Campagne in standard/half and large/whole sizes.
Honey available with all bread orders.

Dear customers,

I hope you have kept well and safe for another week. It was a good few days in the bakery especially on Friday when I, for once, did not try to hurry my bake along. The sourdough loaves were left plenty of time to finish proving before being whisked in the oven. Same thing with the Cornish which were mixed by 930AM but only baked 6 hours later. This freed up my morning and resulted in bigger and plumper loaves so good result all around! 

Here is the menu for week commencing on 1 February 2021. Please order by Monday 5PM. 

Thursday: Pain de Campagne (small or large) and Rugbrod (half or full).

Friday & Saturday: as Thursday with PdC in large only, Wild West (also large only), NYDR, Chocolate & Hazelnut and the special this week is the very herby Tahina & Za'atar levain.

Menu for week c/o 25 January 2021

Apologies for the lateness of the menu but I seem to have run behind a list of tasks which gets longer rather than shorter as the days go by. And it's already the last week of January next week which is another thing that perplexes me. On the bright side, 3 more weeks until a potential end to lockdown.

If you have read that far, it'll be no surprise that I've had no time to experiment since last weekend. So this week's special wont be new but not everything has to be new to feel special! So here goes: 

Please order by Monday 5PM please.

Thursday: Wild West and Rugbrod in standard/half or large/whole size.

Friday & Saturday: as Thursday (WW in large size only), Pain de Campagne (also large size only), Fig & Fennel and the special is Turmeric, nigella & onion levain again.
Friday only: my Cornish saffron bread. I will run my yeasted treats once a month only (Cornish Saffron alternated with Lincs plum bread) until further notice so grab that one if you like it! 

Honey is available every baking day with bread orders.

Just a quick word on your paper bags: some of our you might have seen I used recycled paper bags for this week's deliveries (you would only have got one of YOUR old bags not somone else's just to be clear!). I'm not changing tack on the paper bags so please dont see this as a sign that you need to start returning your bags with the next delivery. I did it this week to buy myself a bit of time as I'm coming near the end of my current stash of bags. The re-used bags you had this week havent been touched in months so pose NO covid risks and this is why I thought it was OK to use them. But it's not time to go back to full recycling mode quite yet so please use your bags at home and put them in your compost bin when you are done with them. I'm still looking for a better solution including using personal canvas bags for all willing customers but that might need to wait after covid.
