I hope you are surviving your lockdown and enjoyed your bread this week. I'm getting on a roll with the specials so fingers crossed for another good batch of fragrant loaves next week with plenty to look forward to. Thursday: Wild West, Pain de Campagne and Rugbrod (all as standard/half and large/whole loaves) Friday & Saturday: Wild West and Pain de Campagne both in large size only, Rugbrod (half or whole). There are two specials this week, an old friend and hopefully a new one: Buckwheat and Poppy which was last run in May 2019 and Cheddar and thyme levain (£3.50 for a standard loaf) which will be a simple sourdough based on wheat & rye flours, water, salt, mature cheddar cubes and fresh thyme. Be aware that the ssecond special is not suitable for people with milk allergy. And I have plenty of honey jars left, both in set and runny. Please place all orders by this Monday (18 January 2021) 5PM. As in previous lockdowns, we will continue baking and to fight the ambiant boredom we will strive to offer a special every week. Thursday: Wild West in standard and large size and Wild West Heritage in standard size only. The Wild West Heritage will use Kamut (Khorasan) flour of which we received a mammoth delivery during the holiday. Note that I have reviewed my production costs and need to increase the price of my WW standard from £2.70 to £3.00 in 2021. No change to the price of a large size loaf. Friday & Saturday: Wild West and Pain de Campagne in large size only. Wild West Heritage, NYDR and our special: Turmeric, Nigella and Onion levain. It is with a heavy heart that I've had to move my baking days to Thursday, Friday and Saturday which means no bread on Tuesdays. Concentrating my baking days in the second half of the week whilst focusing on my other work in the first half will hopefully help me run both jobs alongside each other, keep me sane and find time for the other very important things and people in my life. I'm very sorry for those of you who have been my faithful Tuesday-only customers and I'm hoping that you can find another day in the week where it's convenient to get your bread from me. Pls note: ordering deadline for all baking days this week and next is Tuesday 5PM. Without further ado, this is what will be baking this week. Thursday: Wild West and Rugbrød. Specify if you want small/half or large when ordering. Friday and Saturday: Black & White Sesame, Fig & Fennel, NYDR, and Cranberry & Pecan. Honey available in runny and set with any bread order. Thank you! And here we are, heading into December and the end of 2020 which really has been a year full of surprises and no doubt will keep giving until the very last. I'm glad to report that wst.bkh being an essential business we are not affected by the change in tier from Wednesday and will bake as usual. I have spotted some '00 flour in shops so Mediterranean treats are on the menu to counter the fog.

A slight twist on the menu next week as I'll be offering the fruit loaf on Tuesday this time to even out the load in what's probably going to be an interesting week on all fronts. Lots and lots on so as usual I'm looking for new ways of doing things in order to juggle my desk job and my work in the bakery. And without further ado, here goes: Wild West Tuesday with Wild West in standard and large size AND my Cornish saffron bread. Please order as early as possible and by Sunday (tomorrow) 5PM in any case! Friday & Saturday: Wild West in large size only, Black & white sesame, Poppy & sesame and Walnut bread. I hope you are faring well during lockdown and you are ready to take on the challenge of the next few weeks. As I told a few customers, I took no chances and ordered 129kg of flour last week and more to the point it has arrived so I should be stocked up until early December. Next week I will be going back to using non-wheat flour as I'm in stock with plenty of barley and rye. Tuesday: Pain de Campagne and Rugbrod. Please specify for each if you want a standard (half size for Rugbrod) or large size (full size for Rugbrod). Order by tomorrow Sunday 8 Nov 5PM please. Friday & Saturday: Wild West, Rugbrod (for both, please specify size), Lemon & Barley and Barley & Ale (remember latter contains ale, therefore alcohol). Friday only: My Lincs plum bread. Please order by Wednesday 5PM. Honey is available on all baking days with bread orders. I now rarely send reminders to order as I tend to be at capacity by the time deadline comes. I usually bake a few spares so if you have not ordered in time it's always worth dropping me a line. And finally: during covid, I'm concentrating on safety and as usual bread quality. So as explained before, we are not re-using our small and large brown paper bags and we are not stamping bags any longer (to do with time economy as much as anything else). You will notice that sometimes another name is crossed out on your bag near where your name appears: it is NOT that we are re-using someone else's bag (we have NEVER done that), it's simply that we initially wrote the name of another customer for whom the bag wasnt needed after all so we are using it for you instead. As I am writing this I can see with a heavy heart that we are heading for another month-long at least lockdown. I will try to keep things as they have been in the past few months and bake through the restrictions since I am considered essential food retail and can continue operating. I am just posting the menu for this Tuesday which is as simple as can possibly be: Wild West in standard or large size. Order by tomorrow (Sunday 1 November) 5PM please. The menu for Friday and Saturday will come out on Monday. I've been trying to get another rye starter going and the one currently on my workbench is showing some promise but isnt yet a confirmed success so I'd like to give it another couple of days. A few changes as we head into another lockdown: 1/ I will no longe recycle any paper bags so no need to return them until further notice. Please do re-use them at home if you can and when there's no life left in them then can go in your compost (bin). 2/ We will no longer stamp our bags as it's very time consuming and less worth the effort for single use bags. As usual trying to stream line operations as time never seems to be on my side. I am wishing you all a great weekend and cant wait to hear back from all of you. Tuesday I'll make the Pain au Levain again which is a variation on the Wild West and the Pain de Campagne. I have to say that once my large WW and my large Pains de Campagne were baked it was near impossible to distinguish them so by baking only PaL on Tuesday I'll avoid that problem! Order by tomorrow Sunday evening 5PM please. Friday & Saturday: Wild West, 3-grain, Sultanas & Hazelnuts and Chocolate sourdough. The latter two have hazelnuts in them so if you are allergic to those then I would strongly recommend you dont order bread at the end of the week and go for the Tuesday instead as I cannot at all guarantee non cross-contamination. I have two pots of honey left, one set and one runny so let me know when you order bread if you'd like one of those. I'll restock on honey mid-November. Friday and Saturday: Wild West (large size only), Olive & Rosemary, [Pan Marino (very few to make of these so do order early) SORRY SOLD OUT]and, having looked at my recipe book from when I was training in 2017 I am adding: Pain au Levain. I cant believe I've not made this quintessential French classic before: a cross between a Wild West and a Pain de Campagne with 25% wholegrain overall. I do not add any yeast to mine (although the recipe allows for it) and stick with the 100% sourdough line as with all my breads. £3 for standard or £4 for a large size, specify which when you order please. Order deadline is Wednesday 5PM. If you wish you can still add honey to your bread order. Just a reminder that I wont bake during half-term week (last week of October). It'll be a shorter week this week because your baker needs to take some time off to celebrate her birthday in style (before you ask it's 48!). Apologies for my Tuesday customers as this means no bread on Tuesday I hope I can make it up to you at the end of the week or next week. And I have 5 jars of honey left of the 20 I bought not even 2 weeks ago if you want to add a jar or two to your bread order. Order by Wednesday 5PM please PdC hasnt been on the menu for a long time as I have no rye starter. I still havent got one but I will try another recipe where the levain is build on a wheat starter. I actually used that formula on one of the very first PdCs I made and it worked well so fingers crossed for success second time around. F&F: did my discerning customers noticed that on my last batch 3 weeks ago I had a senile moment and swapped the linseed wtih the pumpkin seeds? Golden linseed it will be this time around, I promise! Well, the equinox has come and gone and we certainly have felt the bite of the autumn wind on our unprepared skin! I think we can put away the summer stuff and bring back the woolie jumpers. Dear All As September unfolds with its full complement of important dates, anniversaries and birthdays (eldest turning 18 on Tuesday!!!), I have slipped back into my usual 3 bakes per week routine and enjoyed an almost full week last week with 52 loaves. Thanks to all of you who have come back to West Street Bakehouse after your holiday or have tried our bread for the first time. This week we will have: Wild West Tuesday with both Wild West and Wild West 50% wholemeal, both come in standard or large size and are different prices so please do check if you are a prepay customer. My big news is that I'm going back to my part-time freelance desk job so the period where baking was my sole paid occupation has gone full circle and come to its natural end (I stopped taking freelance work this time last year). There's a silver lining in everything and I wouldnt have taken the work on if I didnt fancy it; hopefully there will be no change for the bakery but I might have to strealine a few things to keep it going without losing my sanity: simpler menus, probably fewer new breads than in the recent months. We will ease ourselves into our normal routine this week with bread on Friday and Saturday. Keeping it simple as lots going on with school start, voluntary work and 'real' work all looming: Friday: Pan Marino, Wild West (standard OR large, please specify ), my Cornish Saffron Bread. Saturday: same as Friday minus my Cornish Saffron Bread. Apologies for a very white selection but my rye starter died a slow death during the holiday (hadnt been in the best of shape anyway) and my first attempt at a new one failed. I regret to say that it'll probably be a few weeks before Rugbrod, NYDR and Pain de Campagne are back on the menu. Maybe time for me to resurrect some wholemeal recipes to ensure you get your full share of fibre! Honey will come back for sale soon too. Please do register your interest (set or runny), so that I get an idea of quantities when I pick up more stock in Milton in the coming weeks. And again welcome back! I am planning to finish this summer's bake with 3 favorites on Tuesday and in order to allow enough time for my preps I am bringing FORWARD the order deadline to Sunday 5PM please! Another good week in the bakery last week with two bumper bakes on Tuesday and Friday/Saturday. This left little time for much other than baking and the associated cleaning and admin AND a magnificent bike ride on Wednesday near Saffron Walden which was the perfect pick-me-up. As for this week we will have: Wild West Tuesday with Wild West in standard or large size. Order by Monday 1PM please. A lot of choice on Friday and Saturday as I'd like to mop up the small leftovers of special flours before a potential summer break so it goes: Wild West Heritage (khorasan), Barley & Ale, [Pan Marino (SORRY SOLD OUT)], Pain de Campagne (standard or large), Rugbrod (half or whole). And on Friday only: my Lincs plum bread, my Cornish saffron bread. Order by Wednesday 5PM for bread at the end of the week. Prepay customers please can you make sure you transferred your £s by the deadline of the day for which you are ordering bread.
