Menu for week c/o 18 January 2021
I hope you are surviving your lockdown and enjoyed your bread this week. I'm getting on a roll with the specials so fingers crossed for another good batch of fragrant loaves next week with plenty to look forward to.
Thursday: Wild West, Pain de Campagne and Rugbrod (all as standard/half and large/whole loaves)
Friday & Saturday: Wild West and Pain de Campagne both in large size only, Rugbrod (half or whole). There are two specials this week, an old friend and hopefully a new one: Buckwheat and Poppy which was last run in May 2019 and Cheddar and thyme levain (£3.50 for a standard loaf) which will be a simple sourdough based on wheat & rye flours, water, salt, mature cheddar cubes and fresh thyme. Be aware that the ssecond special is not suitable for people with milk allergy.
And I have plenty of honey jars left, both in set and runny.
Please place all orders by this Monday (18 January 2021) 5PM.
Emma & Jules
I wish you all the best for the new year and even if it didnt quite start as we wanted let's make the most of the next few weeks. As in previous lockdowns, we will continue baking and to fight the ambiant boredom we will strive to offer a special every week. So without further ado, here is what will be baked in week commencing this Monday.
Please put in your orders by 5PM on Monday 11 January 2021.
Thursday: Wild West in standard and large size and Wild West Heritage in standard size only.
The Wild West Heritage will use Kamut (Khorasan) flour of which we received a mammoth delivery during the holiday. Note that I have reviewed my production costs and need to increase the price of my WW standard from £2.70 to £3.00 in 2021. No change to the price of a large size loaf.
Friday & Saturday: Wild West and Pain de Campagne in large size only. Wild West Heritage, NYDR and our special: Turmeric, Nigella and Onion levain.
WSB: menu for next 2 weeks
Here is the menu for the next TWO weeks.
Week commencing this Monday (14 Dec 2020). Order by Tuesday 5PM please:
Thursday: PdC (standard or large), Rugbrod (half or whole).
Fri & Sat: WW (large only), Olive & Rosemary, Walnut bread, Chocolate sourdough (has hazelnuts!)
Week commencing on Monday 21 Dec 2020 (order by Monday 5PM please)
Wednesday: WW (standard or large), Rugbrod (half or whole).
Thursday: Lemon & Barley, Barley & Ale, Poppy & Sesame, my Saffron Bread.
As usual you can add honey to every bread order.
It's been a great 2020 despite the many challenges and it's has given me much pleasure to bake for you throughout the year. Jules and I wish you all a very happy Xmas and we will look forward to seeing you again in January. Planned week back is that commencing on 11 Jan 2021.
December : baking days move to Thu-Sat
It is with a heavy heart that I've had to move my baking days to Thursday, Friday and Saturday which means no bread on Tuesdays. Concentrating my baking days in the second half of the week whilst focusing on my other work in the first half will hopefully help me run both jobs alongside each other, keep me sane and find time for the other very important things and people in my life. I'm very sorry for those of you who have been my faithful Tuesday-only customers and I'm hoping that you can find another day in the week where it's convenient to get your bread from me.
Pls note: ordering deadline for all baking days this week and next is Tuesday 5PM.
Without further ado, this is what will be baking this week.
Thursday: Wild West and Rugbrød. Specify if you want small/half or large when ordering.
Friday and Saturday: Black & White Sesame, Fig & Fennel, NYDR, and Cranberry & Pecan.
Honey available in runny and set with any bread order.
These are my baking days for the rest of 2020:
Bread menu for week c/o 30 November 2020
And here we are, heading into December and the end of 2020 which really has been a year full of surprises and no doubt will keep giving until the very last. I'm glad to report that wst.bkh being an essential business we are not affected by the change in tier from Wednesday and will bake as usual. I have spotted some '00 flour in shops so Mediterranean treats are on the menu to counter the fog.
Wild West Tuesday with Wild West in standard and large size and Rugbrod as a half or full tin loaf. I can add nuts to your RGB (almonds, hazelnuts or walnuts) for £1 more per loaf (£0.50 per half loaf). Please order by 5PM tomorrow Sunday 29 November. You can add honey to any order.
Friday and Saturday: Wild West large size only, Pan Marino, Raisin & Rosemary, Rugbrod (see Tuesday) and 3-grain. Honey available with any bread order. All orders to be placed by Weds 5PM.
Have a great week and see you all soon xx
Bread menu c/o 23 November 2020
Dear all, as we are saying good bye to a week full of new experiences (I dropped two loaves from the oven 10 minutes into the bake last week, never happened to me before) a new week is starting on Monday which will mark the beginning of the home stretch to Xmas. But for this week we are sticking with year-round standards and making the most of our rejunenated rye starter!
Tuesday: Pain de Campagne in standard and large size. Rugbrod as a half or full tin load.
Please order before Sunday 5PM.
Friday & Saturday: PdC and Wild West (both large size only), Rugbrod (half or full loaf), NYDR.
Friday only: my Cornish Saffron bread, my Lincs plum bread. Please order by Wednesday 5PM.
And remember that you can add honey to any bread order.
Have a great week,
Emma & Jules xx
Bread menu for week c/o 16 November 2020
A slight twist on the menu next week as I'll be offering the fruit loaf on Tuesday this time to even out the load in what's probably going to be an interesting week on all fronts. Lots and lots on so as usual I'm looking for new ways of doing things in order to juggle my desk job and my work in the bakery.
And without further ado, here goes:
Wild West Tuesday with Wild West in standard and large size AND my Cornish saffron bread. Please order as early as possible and by Sunday (tomorrow) 5PM in any case!
Friday & Saturday: Wild West in large size only, Black & white sesame, Poppy & sesame and Walnut bread. Please order by Wednesday 5PM.
Honey as usual available with any bread order (£5.75 per pot, see in Treats). Remember to specify either runny or set.
Have a good week,
Emma & Jules
My dear customers
I hope you are faring well during lockdown and you are ready to take on the challenge of the next few weeks. As I told a few customers, I took no chances and ordered 129kg of flour last week and more to the point it has arrived so I should be stocked up until early December.
Next week I will be going back to using non-wheat flour as I'm in stock with plenty of barley and rye.
Tuesday: Pain de Campagne and Rugbrod. Please specify for each if you want a standard (half size for Rugbrod) or large size (full size for Rugbrod). Order by tomorrow Sunday 8 Nov 5PM please.
Friday & Saturday: Wild West, Rugbrod (for both, please specify size), Lemon & Barley and Barley & Ale (remember latter contains ale, therefore alcohol).
Friday only: My Lincs plum bread.
Please order by Wednesday 5PM.
Honey is available on all baking days with bread orders.
I now rarely send reminders to order as I tend to be at capacity by the time deadline comes. I usually bake a few spares so if you have not ordered in time it's always worth dropping me a line.
And finally: during covid, I'm concentrating on safety and as usual bread quality. So as explained before, we are not re-using our small and large brown paper bags and we are not stamping bags any longer (to do with time economy as much as anything else). You will notice that sometimes another name is crossed out on your bag near where your name appears: it is NOT that we are re-using someone else's bag (we have NEVER done that), it's simply that we initially wrote the name of another customer for whom the bag wasnt needed after all so we are using it for you instead.
OK everyone, my rye starter has played ball so here is the menu for:
Friday and Saturday: Pain de Campagne in standard and large size, Rugbrod as half or whole tin loaf (in both cases, please specify size on ordering), NYDR, and Fig & Fennel. Order by Wed 5PM.
Honey will be back in stock and can be added to any bread order.
Bread menu for first November week - part 1
As I am writing this I can see with a heavy heart that we are heading for another month-long at least lockdown. I will try to keep things as they have been in the past few months and bake through the restrictions since I am considered essential food retail and can continue operating.
I am just posting the menu for this Tuesday which is as simple as can possibly be:
Wild West in standard or large size. Order by tomorrow (Sunday 1 November) 5PM please.
The menu for Friday and Saturday will come out on Monday. I've been trying to get another rye starter going and the one currently on my workbench is showing some promise but isnt yet a confirmed success so I'd like to give it another couple of days.
A few changes as we head into another lockdown:
1/ I will no longe recycle any paper bags so no need to return them until further notice. Please do re-use them at home if you can and when there's no life left in them then can go in your compost (bin).
2/ We will no longer stamp our bags as it's very time consuming and less worth the effort for single use bags. As usual trying to stream line operations as time never seems to be on my side.
I am wishing you all a great weekend and cant wait to hear back from all of you.
Bread menu for week c/o 19 October 2020
Dear All, a good and busy week last week thank you for all your orders. This week is the last one before half-term when I wont be baking so order plenty if you want spare!
Tuesday I'll make the Pain au Levain again which is a variation on the Wild West and the Pain de Campagne. I have to say that once my large WW and my large Pains de Campagne were baked it was near impossible to distinguish them so by baking only PaL on Tuesday I'll avoid that problem! Order by tomorrow Sunday evening 5PM please.
Friday & Saturday: Wild West, 3-grain, Sultanas & Hazelnuts and Chocolate sourdough. The latter two have hazelnuts in them so if you are allergic to those then I would strongly recommend you dont order bread at the end of the week and go for the Tuesday instead as I cannot at all guarantee non cross-contamination.
I have two pots of honey left, one set and one runny so let me know when you order bread if you'd like one of those. I'll restock on honey mid-November.
Have a great week and see you soon or in November
Bread menu for next week (c/o 12 Oct 2020)
Thank you for making me feel very special last week for my birthday! One more birthday to celebrate in our household and it's back to business as usual from Monday with:
Wild West Tuesday with Wild West in standard or large size. Remember that cutoff to order is Sunday (tomorrow) 5PM. Do specify which size as well please.
Friday and Saturday: Wild West (large size only), Olive & Rosemary, [Pan Marino (very few to make of these so do order early) SORRY SOLD OUT]and, having looked at my recipe book from when I was training in 2017 I am adding: Pain au Levain. I cant believe I've not made this quintessential French classic before: a cross between a Wild West and a Pain de Campagne with 25% wholegrain overall. I do not add any yeast to mine (although the recipe allows for it) and stick with the 100% sourdough line as with all my breads. £3 for standard or £4 for a large size, specify which when you order please. Order deadline is Wednesday 5PM.
If you wish you can still add honey to your bread order.
Just a reminder that I wont bake during half-term week (last week of October).
Have a great week and see you soon.
It'll be a shorter week this week because your baker needs to take some time off to celebrate her birthday in style (before you ask it's 48!). Apologies for my Tuesday customers as this means no bread on Tuesday I hope I can make it up to you at the end of the week or next week.
Friday & Saturday: Wild West and Pain de Campagne both in standard or large size (please specify which), Fig & Fennel
Friday only: my Cornish Saffron bread.
And I have 5 jars of honey left of the 20 I bought not even 2 weeks ago if you want to add a jar or two to your bread order.
Order by Wednesday 5PM please
PdC hasnt been on the menu for a long time as I have no rye starter. I still havent got one but I will try another recipe where the levain is build on a wheat starter. I actually used that formula on one of the very first PdCs I made and it worked well so fingers crossed for success second time around. F&F: did my discerning customers noticed that on my last batch 3 weeks ago I had a senile moment and swapped the linseed wtih the pumpkin seeds? Golden linseed it will be this time around, I promise!
Well, the equinox has come and gone and we certainly have felt the bite of the autumn wind on our unprepared skin! I think we can put away the summer stuff and bring back the woolie jumpers. A few changes at the bakery too which I'll explain alongside the menu below:
Wild West Tuesday is back with Wild West in standard or large size (do specify which). Please note NEW CUTOFF time for ordering by Sunday 5PM please.
Friday & Saturday: Wild West in large size only, Pan Marino (there probably will be a limit on how many I can make so put in your order early if you want one), Barley & Ale.
Friday only: my Lincs plum bread.
Please order by Wednesday 5PM.
Please note that honey is back on sale and can be added to any bread order.
People collecting from my collection box: I will no longer send a text to say bread is ready for collection because with so many of you I was getting in a tangle. So all loaves for collection will be placed in the box by 5PM of your collection day. I will only text if there's a problem so no text is good news.
Enjoy the weekend and see you next week!
Bread menu for week c/o 21 Sept 2020
Good morning all
It feels like September is bringing back the old routine (all kids back at school in some form - yayy!) and new things we are all going to have to cope with. For me it's quite mundane: I just need to suss out how to juggle the new desk job, the baking and normal day-to-day life that also takes time! Didnt quite cut it last week but I'm sure it's nothing that bad weather wont sort out!! I'll try again this week and here is my simple and pared down menu:
Tuesday is just Pan Marino this week. It comes in one size only. Order by Monday 1PM please
Friday and Saturday: Wild West in large size only, Black and White Sesame and Olive & Rosemary. Order by Wednesday 5PM please
Have a good weekend!
Emma (& Jules)
Bread menu for week c/o 14/09/2020
As September unfolds with its full complement of important dates, anniversaries and birthdays (eldest turning 18 on Tuesday!!!), I have slipped back into my usual 3 bakes per week routine and enjoyed an almost full week last week with 52 loaves. Thanks to all of you who have come back to West Street Bakehouse after your holiday or have tried our bread for the first time.
This week we will have:
Wild West Tuesday with both Wild West and Wild West 50% wholemeal, both come in standard or large size and are different prices so please do check if you are a prepay customer.
Order by Monday 1PM.
Friday & Saturday: Wild West (standard or large, please specify), 3–grain and Fig & Fennel.
Friday only: my Cornish Saffron bread
Order by Wednesday 5PM.
Still no rye starter emerging hence no Rugbrod or NYDR this week and I'm planning to fetch more honey towards the end of the month. Do bear with me on both fronts.
Have a good week and see some of you soon.
We are back in full swing next week with the menu below.
My big news is that I'm going back to my part-time freelance desk job so the period where baking was my sole paid occupation has gone full circle and come to its natural end (I stopped taking freelance work this time last year). There's a silver lining in everything and I wouldnt have taken the work on if I didnt fancy it; hopefully there will be no change for the bakery but I might have to strealine a few things to keep it going without losing my sanity: simpler menus, probably fewer new breads than in the recent months.
Anyway, here's what's baking this week:
Wild West Tuesday with Wild West in standard or large size (please say which when ordering). Order deadline is Monday 1PM.
Friday & Saturday: as Tuesday plus Walnut bread and Black and White Sesame.
Friday only: my Lincs plum bread.
Order deadline is Wednesday 5PM.
Have a good week and hopefully see you soon x
Emma & Jules
First bake back - yayy!
Hello dear customers and welcome back to West Street Bakehouse.
We will ease ourselves into our normal routine this week with bread on Friday and Saturday. Keeping it simple as lots going on with school start, voluntary work and 'real' work all looming:
Friday: Pan Marino, Wild West (standard OR large, please specify ), my Cornish Saffron Bread.
Saturday: same as Friday minus my Cornish Saffron Bread.
Apologies for a very white selection but my rye starter died a slow death during the holiday (hadnt been in the best of shape anyway) and my first attempt at a new one failed. I regret to say that it'll probably be a few weeks before Rugbrod, NYDR and Pain de Campagne are back on the menu. Maybe time for me to resurrect some wholemeal recipes to ensure you get your full share of fibre!
Honey will come back for sale soon too. Please do register your interest (set or runny), so that I get an idea of quantities when I pick up more stock in Milton in the coming weeks.
And again welcome back!
Emma & Jules
We are now closed for August
West Street Bakehouse, baker and delivery boy, are now closed for August. First bake back will be Friday 4 September 2020 and menu email will go to your inboxes during the August BH weekend.

Have a great August and see you in September.
Emma & Jules.
Last bread menu post for the summer!
Good morning all,
I am planning to finish this summer's bake with 3 favorites on Tuesday and in order to allow enough time for my preps I am bringing FORWARD the order deadline to Sunday 5PM please! What better day to send out next week's menu than this Friday which looks as if it might be the best day of our summer yet?!
Tuesday 4 August: Pan Marino, Wild West in large size only, my Cornish saffron bread.
Very happy to take large orders for those of you who want to (continue) stock(ing) up for August.
I hope you all have a good holiday and I'll be looking forward to baking again on 4 September 2020.
Emma (& Jules!)
Next week will be the last full week of baking with only one bake left on the following Tuesday before a 4-week break. With some of my regulars on holiday I've had more time and went on an adventure to Linton on Wednesday where I was at last able to sample produce from the wonderful Jigsaw Bakery, including the first of two very tasty Bakewell tarts I had this week (other one was at the Stove in Bourn). I've also revisited old recipes and I'd like to share one of my favorite sweet-ish treats with you, so this week we will have:
Wild West Tuesday with Wild West in standard or large size and Rugbrod (half or whole).
Please order by Monday 1PM.
Friday and Saturday: as Tuesday plus Pain de Campagne (standard or large size), Walnut bread and as a Friday special: my Banana bread, available in plain or gluten-free version (see below for ingredient list). £8 for a whole cake (850g+) or £4 for half one.
Please order by Wednesday 5PM
Good morning Comberton and visitors from further afar!
thank you for a good week last week and here is what will be baking in my kitchen this week as the summer holiday gets underway (if you dont want to receive the menu email whilst you are away please let me know):
Tuesday will be Pain de Campagne (standard or large) and Rugbrod (half or whole).
Please order by Monday 1PM.
Friday/Saturday: as Tuesday plus Poppy & Sesame, Sultana and Hazenult levain and (Friday only) my Lincs plum bread. Please order by Wednesday 5PM.
I have a few jars of honey left, set or runny, which can be added to a bread order on any day.
Update: I've now sold out of honey. More in September
Make the most the week, whatever it/the weather brings and I look forward to seeing you soon!
WSB now selling local honey
Buying local honey is one of the many food-related things that excite me so I'm pleased to announce that West Street Bakehouse is now selling set and runny honey from a local beekeeper in Milton. Each jar weighs 454g and retails at £5.75. Click here for full product description.
After the usual ups and downs in the bakery (never a dull moment) we are on to a new week with:
Tuesday (Bastille day!): Wild West in standard and large size. Order by Monday 1PM.
Friday and Saturday: making it a fruity day with Fig & Fennel, Lemon & Barley and Olive & Rosemary. Plus NYDR and Rugbrod (half or whole) and Wild West again (standard or large).
Order by Weds 5PM.
NEW: we are now selling honey from a local beekeeper alongside our own breads.
Holiday: I'll close in August. Last bake: Tue 4 August 2020; first bake back: Fri 4 September 2020.
Another good week in the bakery last week with two bumper bakes on Tuesday and Friday/Saturday. This left little time for much other than baking and the associated cleaning and admin AND a magnificent bike ride on Wednesday near Saffron Walden which was the perfect pick-me-up. As for this week we will have:
Wild West Tuesday with Wild West in standard or large size. Order by Monday 1PM please.
A lot of choice on Friday and Saturday as I'd like to mop up the small leftovers of special flours before a potential summer break so it goes: Wild West Heritage (khorasan), Barley & Ale, [Pan Marino (SORRY SOLD OUT)], Pain de Campagne (standard or large), Rugbrod (half or whole).
And on Friday only: my Lincs plum bread, my Cornish saffron bread.
Order by Wednesday 5PM for bread at the end of the week.
Prepay customers please can you make sure you transferred your £s by the deadline of the day for which you are ordering bread. For a Friday loaf for instance, this means paying by Wednesday 5PM please. This allows me to need to check only once!
