Hope you all enjoyed the Summer solstice yesterday and here is the menu for next week after a mixed bag of a week in the bakery (sourdough is never boring!) which finished on a high.
Tuesday: Rugbrod (small or large), Pan Marino in limited edition. I can only make about 15 loaves and they will all go so do order early and in any case by tomorrow Monday 11AM, please. UPDATE: Pan Marinos have almost all gone. Prepay customers please no not transfer any money unless I have confirmed your order. Just when I think it cant get any better you amaze with another incredible week! I baked 81 loaves for you last week and every Pan Marino that got out of the oven put a smile on my face. My two rosemary bushes are crying out for mercy so I'll leave a couple of weeks go by before the next wave of Italian breads. With more test bakes on the go I am only publishing the menu for this Tuesday which will be a comeback to: Wild West Tuesday with our plain Wild West in standard or large size. Plus Rugbrod (small or whole) and Cornish Saffron bread (now part of our regular Treats). Order by Monday 1PM. There will be bread on Friday and Saturday too. Menu will be published by Monday evening and orders will need to be in by Wednesday 7PM. Note on covid-related measures: people collecting from the box will still be asked to sanitise hands before self serving! I've replaced the AB wipes with AB hand gel and the opaque box was superceded by a transparent one so that you can see where your bread is in the box before opening it. I am trying to place your bread with your name clearly visible from the top so that you can spot your bread easily and the chances of you touching someone else's bread are kept to a minimum. I hope you can bear with me on this as everybody's health remains one of my prime concerns. So this week the menu will go like so: Tuesday: Pan Marino, Pain de Campagne and SPECIAL: Cornish saffron bread as per photo below (similar to my Lincs plum bread, with saffron for the yellow colour and exotic taste) Friday/Saturday: like Tuesday, plus Walnut bread. Can you believe that it's already June and that this week's will be 5 months after the first bake back from Christmas in the week c/o 6 January 2020. I cannot believe how time has flown by! I've managed a test bake this week which I think is worth sharing so there's a special for Friday/Saturday. Here is the full menu for the week (to avoid disappointment no Pan Marino as I'm still not stocked up with Italian tipo '00 flour but I'll be week after next). Tuesday: Wild West in standard or large size (same recipe as last week which is a bit different to usual with a 48h matured levain and no rye flour, more tang, more bubbles in the crumb, a bit less colour on the crust). As usual order by Monday 1PM please. Friday/Saturday: Pain de Campagne in standard or large size, Rugbrod (half or whole), Black & White sesame, or Special 'Cheddar and caramelised onion bread' £4 for a 550g+ loaf (ie standard size), as per photos below. So sorry for not posting last night but here comes the menu just in time hopefully before most of you settle to work and I start my merry round of errands at 915AM. No luck on the trial bake (it was challah which has always eluded me and continue to do so) so we are back with our standard menu of: Friday-Saturday: Wild West in std or large size, Poppy & sesame, Fig & Fennel, Rugbrod Friday only: My Lincs plum bread. Order before tomorrow Wednesday 7PM, earlier of you can is always best but want to leave enough time for you all to order as this is coming so late. On the trial bakes' front, I will continue to do them =until something good comes out. I am not testing new sourdough breads at the moment, just yeasted products, including sweet ones. Some people have already asked to be put on my special distribution email list to buy what might come out of the trials each week. When I have something that is worth selling I send an email with a photo and it's available on a first come first served basis for a standard price of £3 (same payment arrangements as whatever you are on). If you want to be added just let me know. Thanks, Emma News this week is that it was an uneventful 7 days which saw the making of 53 loaves of bread by a calmer and more collected baker. I am also making plans for an exciting future in the bakery (see photos at the bottom of the previous post for spoilers) but still need to hone a few details before revealing it all. Oh and yes West Street Bakehouse is now the proud owner of 2 yes TWO mixers, one planetary Kitchenaid for enriched dough (yesterdays' news) and a spiral mixer Made in Italy for bread (or pizza) dough which arrived on Tuesday, just in time to knead the 13kg of dough for the 20 x 3-grain levains which were on order this week. Next week we will stick with our old friends: Tuesday: Pain de Campagne (standard or large), Rugbrod (half or whole) and Lincs Plum Bread. Order by Monday 1PM. If you have never tried the Plum bread before and are a Tuesday customer, now is a good time to try it out as I normally only run it on Fridays. A couple of slices per day will sort you out for breakfast, elevenses or teatime for the rest of the week. Another record breaking week this week (64 loaves) where I discovered where my limits lie and how to recover things from the brink. Nuff said that the Italian breads didnt quite go to plan on Thursday morning (yet everything had started oh so well!...) but hopefully it didnt show in the final results as I had good feedback on the Pan Marinos! Another test to my resilience came on Friday and Saturday when my oven started shutting off mid-bake and good old AGA had to be brought in as an emergency backup. It turned out that the electrical fault was in my power socket and not the oven, so the show can go on! Another bake chalked up to experience and roll on next week!

News is that I acquired two mixers at the end of the last financial year, one 6.9L Heavy Duty Kitchenaid (planetary mixer) for my Lincs plum breads and its looks and one spiral mixer soon to arrive from Northern Italy (oh yes!) for all my sourdough bread making. Next investment down the line will be a second fridge as I can only prove 30 loaves at a time with one. And still within this financial year a proper deck oven with stone surfaces; no fault with my current convection oven and its 5mm steel plate but I will soon be able to bake more than 5 loaves if I dont want to be at it all night. Rugbrod and Lincs plum breads are still baked in the AGA for old time's sake! All this was made possible by you my dear faithful customers (some of you since day 1 on 6 November 2018) and I cant thank you enough for your trust!

I have to wait a bit before posting the menu for the end of the week as I wanted to bake an old recipe again and make sure it works before I could offer to my customers and it has so here goes: Friday & Saturday: Pain de Campagne, as per photo below, this is a basic wheat and rye bread, baked in a round banneton, with a darker crust and a tangy taste as it's risen on a rye levain (like the NYDR, PdC has no spices though, it's plain). It's sourdough bread as simple as it gets really. £3 for a standard size or £4 for a larger one. For those fancying bits in their breads I'll also bake Sultana & Hazelnut levain and once again the Chocolate sourdough. For those rye lovers among us there is Rugbrod. Order by Wednesday 5PM Customers on the mailing list should have received the menu for tomorrow (Wild West only, in standard and large size) and been able to order by the cutoff time of 1PM today. It is Easter already next weekend, my and many people's favourite time of year! And we are all confined at home, what a shame! I hope some sourdough bread will cheer you up! There will be bread on Tuesday, I dont know about Friday and Saturday but I'm hopeful although I've not heard from delivery company yet about my flour bulk order. On Tuesday I'll bake Wild Wests (standard size only), Wild Wests with heritage flour (emmer) and Rugbrod (half or whole). Please let me have your orders by tomorrow Monday 1PM, 2 loaves max per family excluding order for Rugbrod. I will confirm your order on Monday evening so please, if you are a prepaying customer, do not pay before you have heard back from me. Given my very limited flour supply I'll serve medics first, followed by people who had no bread last week, followed by people who had no bread on Friday. But despair not and do put your order in if you want bread because I do think I have enough to fulfil all orders given what normally comes in on a Tuesday. I will deliver to Comberton residents as I want to limit traffic into my collection box next week for everyone's safety. Please put your own boxes out as I will not knock on your door! Collections for people outside of the village remain as they were. Quick update: I have used up my old stock of flour from my regular supplier and I have loads on the way which hasnt materialised yet. But I've been hoarding bread flour two 1.5kg bag at a time from a well known supermarket chain and although it's not the premium flour I like to use, I think in times of scarcity it'll still make some pretty decent bread on Tuesday. Not sure what I'll do with it but I'll probably cut it with a fair amount of other flour I have (emmer, and malted multigrain) to make it last a bit longer and hopefully until I'm back with full stock.

I didnt publish a menu this week because there is for now no menu beyond what I'm baking on Tuesday which is already sold out (all Wild Wests). I've almost run out of flour and although I've got two orders from the mill for a total of 100kg, until the first batch turns up at my door, there's no point me making any promises. And delivery times are one of the many things that have become very uncertain these days. So watch this space, I'm really hoping to be able to serve you all soon. Without going all soppy I'd like to thank you all for being wonderful and cooperative and offering to help in many ways, by collecting your loaves and even some of you offering me flour from your own cupboards. But there's many of you and I need a big big bag of the white stuff to keep you all happy so let's wait until the delivery man comes! It is my plan to run a small but perfectly formed bake on Friday and Saturday with the rest of the flours I have. I hope that this finds you healthy. I would like to assure you that there's no sign of COVID-19 at our house and that we are washing our hands thoroughly. I sent out my paperwork to renew my Food Hygiene record this week, which was quite timely in the circumstances. We are back to 2 main weekly and this week will have: Wild West Tuesday with Wild West 70% in standard and large size. Will be using a brand new stock of stoneground and organic wholegrain wheat flour for this. Order by Monday 1PM. Friday & Saturday: Wild West with Kamut, Fig & Fennel, Rugbrod (please indicate half or whole) and Friday only: my Lincs plum bread. Order by Weds 5PM. Thanks for a bumper week last week as I had my highest loaf count ever, 45 loaves. Whohoo! Those of you who ordered the new bread, Pan Marino, please let me have your feedback. I will only be baking on Tuesday next week and Wild West Tuesday will be both for plain Wild West and Wild West 70% wholegrain, both available in standard and large size. Please order early and at the latest by Monday 1PM. Week after next there will be NO BAKE on TUESDAY but normal service will resume at the end of that week (Fri-Sat 13-14 March).
