This is the section for people with a sweet, but not too sweet, tooth! Most of our treats come from recipes we have adapted for our own tastebuds and we hope you like them too. They are risen with commercial yeast, unless it says sourdough in the name, and many use the sponge method where a small amount of yeast is added to an equal quantity of flour and liquid (milk or water) and left overnight for the yeast to multiply. The resulting frothy sponge is then added to the final recipe on the day of baking. This process results in just the right amount of yeast, more taste and better keeping quality in the final products.
We avoid adding too much sugar and do not use any in products with dried fruit, mixed peel, or chocolate as these ingredients impart enough sweetness on their own. We are not vegetarian but our products are. For our treats in particular this means no lard. Our products are not vegan and we use dairy products.
