Last week of May baking wise so it's pick-your-own bread this week where you can choose any bread from my Breads page for delivery on Thursday, Friday or Saturday this week. In addition, I also have a one-off seasonal bread: Wild Garlic Pesto Wild West. You can see pictures of this bread in the making in this Update section, scroll down to week before last's posts. 

No bake next week. First baking days after half-term holiday: 6 June. Expect bread menu email in your Inbox in weekend 2–3 June.

Enjoy the sunshine this week and take your breads for a picnic!

5 orders on Thu: 1 ww, 2 3-grain and 2 olive & rosemary

Saturday's crowd: 2 f&f, 1 large bw sesamea and 1 std (for us), 1 b&a, 2 walnuts, 1 ww.

Fri 7pm: wheat levain at peak maturity for 8 breads on Sat.

Thursday: Buckwheat & Poppy, Poppy & Sesame
Friday
: Walnut, NY deli rye
Saturday: Raisin & Rosemary, Fig & Fennel, Olive & Rosemary

Any of the 3 days above: all Wild Wests and Black and White Sesame, all these types in Standard or Large (round) sizes (£4.50 per large loaf except simple Wild West at £4).

Tuesday 4PM update: Fri & Sat are (near) full, capacity for 2 more loaves on Thursday.

1st bake of week looking v. good indeed + blast from the past with Sarrasin & Pavot, that's the 2nd from R in BR corner. Love that bread! Making 2 more tomo!

And on Friday they came in pairs. Glad to see NY deli rye back with right cuts, thanks to new flour (and new starter). 2 Buckwheat & Poppy and 2 Walnuts. More tomo.

Wild Garlic Pesto seasonal bread

The fruit of this weekend's effort can be seen below. Some progress being made towards finalising the recipe, probably for a one off seasonal bread in the last week of May.

Thursday: Walnut, Semolina Bread
Friday: Raisin & Rosemary, Fig & Fennel, Olive & Rosemary
Saturday: Barley & Ale, 3–grain.

Any of the 3 days above: all Wild Wests and Black and White Sesame, all these types in Standard or Large (round) sizes (£4.50 per large loaf except simple Wild West at £4).

Friday is full, still taking orders for Saturday (capacity for 4 more).

A late Easter miracle: my rye starter which I thought had died is alive and kicking after all. Not much beats the taste of a rye-leavened wheat bread! NY deli rye alert for next week!

8 breads today, all enormous due to hyperactive levain (refreshed a bit later than usual and hot day means was at its peak when it was mixed to dough)

Friday's inserts: figs + toasted fennel seeds + golden linseed; raisins + rosemary + lemon zest + olive oil + honey; olives + rosemary + lemon zest + toasted pumpkin seeds. Good smells!

Saturday's bake: as usual a seedy one. Also made a NY deli rye for ourselves and it was delicious, defo the King of Bread for me (on a par with Rugbrod).

Focus on Fruity & Heritage breads this week. Daily specials below; available-every-day breads further down. Please order by midnight 2 days before your bread is due.

Thursday: Fig & Fennel, WW with Einkorn
Friday: Raisin & Rosemary, WW with Emmer
Saturday: Olive & Rosemary, WW with Kamut

Any day and in standard or large (round) sizes: any of the Wild Wests and Black & White Sesame. Any standard loaf of less than £3 costs £4 in large; £4.50 otherwise.
