Bread menu for next week (c/o 29 June 2020)

A simple menu for next week whilst I marvel at the date on this menu and the realisation that half the year is already gone! And what half a year it's been!

Tuesday: Wild West and Pain de Campagne, both standard or large size. Order by Monday 1PM. 

Friday & Saturday: as Tuesday + Rugbrod (half or whole), Black & White Sesame, Walnut bread. 
Friday only: my Cornish saffron bread, my Lincs plum bread
Order by Wednesday 5PM please.

Housekeeping:
  • If you have received an invoice from me please can you settle as quickly as possible as it does help cashflow since I pay myself every week!
  • If you are going on holiday for a large chunk of the summer let me know and I can take you off the distribution list and put you on it again when you are back.
  • I'm planning to take some time off this summer but dont know when yet. I usually take all of August off but this might not work so well this year. I'll keep you posted when plans firm up!

CW from TL: Tuesday's crowd, some of the best looking Wild Wests in a while, branding the Cornish saffron with a bit of yellow dye and a saffron stamen to distinguish them from Lincs plum after baking, and 4 small and perfectly formed PdCs.

Bread menu for next week c/o 22 June 2020

Hope you all enjoyed the Summer solstice yesterday and here is the menu for next week after a mixed bag of a week in the bakery (sourdough is never boring!) which finished on a high.

Tuesday: Rugbrod (small or large), Pan Marino in limited edition. I can only make about 15 loaves and they will all go so do order early and in any case by tomorrow Monday 11AM, please.
UPDATE: Pan Marinos have almost all gone. Prepay customers please no not transfer any money unless I have confirmed your order. 

Friday/Saturday: Pain de Campagne (small or large), Wild West Heritage (with khorasan), Rugbrod (small or large), 3-grain, and on Friday only: my Lincs plum bread. Order by Wednesday 5PM

Above: bird's view of Friday's bake minus 3 large PdC which had already been boxed. Right: those blisters would be bad on your skin but are a (good) sign of long slow fermentation on your sourdough bread.

My focaccia test day didnt go quite as expected so it's back to the drawing board from tomorrow. The rest of the week will rely on old but delicious regulars:

Friday / Saturday: Wild West (standard or large size), Rugbrod, NYDR
Friday only: my Cornish saffron bread.
Order by Wednesday 7PM.

Dear customers,

Just when I think it cant get any better you amaze with another incredible week! I baked 81 loaves for you last week and every Pan Marino that got out of the oven put a smile on my face. My two rosemary bushes are crying out for mercy so I'll leave a couple of weeks go by before the next wave of Italian breads.

With more test bakes on the go I am only publishing the menu for this Tuesday which will be a comeback to:

Wild West Tuesday with our plain Wild West in standard or large size. 
Plus Rugbrod (small or whole) and Cornish Saffron bread (now part of our regular Treats).
Order by Monday 1PM. 

There will be bread on Friday and Saturday too. Menu will be published by Monday evening and orders will need to be in by Wednesday 7PM. 

Note on covid-related measures: people collecting from the box will still be asked to sanitise hands before self serving! I've replaced the AB wipes with AB hand gel and the opaque box was superceded by a transparent one so that you can see where your bread is in the box before opening it. I am trying to place your bread with your name clearly visible from the top so that you can spot your bread easily and the chances of you touching someone else's bread are kept to a minimum. I hope you can bear with me on this as everybody's health remains one of my prime concerns.

Dear customer

Dreary weather today but there is canned heat in your favourite baker's heels as she's stocked up with all the right flours again. So this week the menu will go like so:

Tuesday: Pan Marino, Pain de Campagne and SPECIAL: Cornish saffron bread as per photo below (similar to my Lincs plum bread, with saffron for the yellow colour and exotic taste)

Friday/Saturday: like Tuesday, plus Walnut bread. Note: Cornish saffron breads will be baked on Friday so will be one day old if you want one on Saturday. 

Order by Monday 1PM for bread on Tuesday or Wednesday 5PM for bread on Friday/Saturday. Do order earlier if you can as I expect demand to be high due to Pan Marino being everyone's favorite.

Cornish saffron bread - Ingredients (allergens): wheat flour, milk, currants (include sunflower oil), mixed peel (orange & lemon peel, glucose syrup, sugar, citric acid, sulphur dioxide), mixed spice (cinnamon, coriander, nutmeg, cloves, fennel, ginger, caraway, pimento), butter, yeast, salt, traces of palm, rapeseed or coconut oil (to grease tins).
May contain traces of sesame and nuts.

Week in pictures: TL below the Cornish Saffron bread's crumbshot is the same in the making when the saffron is put to infuse in the milk. Below that is the dough of the Pan Marino just bef preshape: shiny and wet dough at the end of fermentation then (below) I've put flour on top, pressed it down, which has inflated the bubbles even more! Above two photos are Tue and Fri bakes. 80 loaves in total this week.
