Bread menu for week c/o 27 April

Thanks for a record week again last week with 57 loaves on order. News is that I acquired two mixers at the end of the last financial year, one 6.9L Heavy Duty Kitchenaid (planetary mixer) for my Lincs plum breads and its looks and one spiral mixer soon to arrive from Northern Italy (oh yes!) for all my sourdough bread making. Next investment down the line will be a second fridge as I can only prove 30 loaves at a time with one. And still within this financial year a proper deck oven with stone surfaces; no fault with my current convection oven and its 5mm steel plate but I will soon be able to bake more than 5 loaves if I dont want to be at it all night. Rugbrod and Lincs plum breads are still baked in the AGA for old time's sake! All this was made possible by you my dear faithful customers (some of you since day 1 on 6 November 2018) and I cant thank you enough for your trust!

With this nice little intro, here is what is baking this week:

Wild West Tuesday with Wild West with 50% wholegrain. I'm going to twist my usual recipe and lower the wholegrain content for something lighter. Let me know what you think if you order it. As usual, this comes in standard or large size. Order by Monday 1PM please.

Friday & Saturday:
  • I ordered a large bag of tipo '00 flour, so Italian breads here we come! Pan Marino and Raisin & Rosemary. These two will now come as a pair in the menu since they use same basic dough.
  • Pain de Campagne (PdC) in standard or large size
  • White levain with small seeds and almonds (allergen): test bake from last week which worked well. Normal price will be £3.50 if it makes it to the menu but £3 for a standard loaf this week (see picture below).
Friday only: my Lincs plum bread
Order by Wednesday 5PM please.

Any of the days above: Rugbrod as a half or full loaf. I can add nuts (almonds this week) for another 50p per half loaf, please ask at the time of ordering. Same ordering deadlines.

Please can I politely ask all my prepay customers to pay for their loaves by the ordering deadline! Thank you for your cooperation! If you order regularly and would like to move to a tab (you know who you are), please enquire!

Bread menu for the rest of this week

Apologies for posting the rest of this week's menu later than planned. My test bake failed so we are back with our usual suspects. Fingers crossed for some newbies next week or the week after that.

Friday & Saturday:
  • plain Wild West in standard or large size
  • Walnut bread
  • Rugbrod as either a half or whole loaf. Variation: either plain Rugbrod as advertised on website or with walnuts (+50p per half loaf or +£1 for full loaf for the nutty variation)
Friday only: my Lincs plum bread. 

Order by tomorrow Wednesday 7PM please.

Bread menu for week starting Easter Monday

Dear All

I have to wait a bit before posting the menu for the end of the week as I wanted to bake an old recipe again and make sure it works before I could offer to my customers and it has so here goes:

Friday & Saturday: Pain de Campagne, as per photo below, this is a basic wheat and rye bread, baked in a round banneton, with a darker crust and a tangy taste as it's risen on a rye levain (like the NYDR, PdC has no spices though, it's plain). It's sourdough bread as simple as it gets really. £3 for a standard size or £4 for a larger one.
For those fancying bits in their breads I'll also bake Sultana & Hazelnut levain and once again the Chocolate sourdough. For those rye lovers among us there is Rugbrod. 
Order by Wednesday 5PM

Customers on the mailing list should have received the menu for tomorrow (Wild West only, in standard and large size) and been able to order by the cutoff time of 1PM today. However if you are new to us and would still like bread tomorrow, drop me a line as I might have spares. 

Bread menu week before Easter (c/o 6 April 2020)

Dear All

It is Easter already next weekend, my and many people's favourite time of year! And we are all confined at home, what a shame! I hope some sourdough bread will cheer you up!

Wild West Tuesday with Wild West with 70% wholegrain in large or standard size.
Order by tomorrow (Monday) 1PM please.

Friday & Saturday: 3-grain levain, Chocolate sourdough (subject to enough orders for a batch), Rugbrod
Friday only: my Lincs plum bread. 
Order by Wednesday 5PM please.

Max. order per week is 4 loaves (excluding Rugbrod) per family. If you do want more, let me know and it's possible I can still squeeze it in but want to give everyone an equal opportunity first. 

Thank you so much to all of you for bearing with me when flour was scarce. I'm now back to full stock of white organic bread flour, stoneground wholemeal (organic and not) and stoneground rye flour thanks to the excellent millers which many artisan bakers use in this country. 

Not planning any interruption over Easter, so back as usual on Tuesday following Easter Monday.
