Pre-Easter menu: Weds–Fri, no bake Saturday

We will be running an extended menu for the run-up to the Easter weekend with bread and sweet treats on Wed, Thu and (good) Friday. No bake on Saturday nor in the following week. First bake back will be in week c/o 12 April.

***There will be an update on West Street Bakehouse during the week of Easter Monday (our week off) as the way we operate the business will change when we are back on Thu 15 April***

But for this week, Wed 31 Mar – Fri 2 April, this is what we'll have (see links below the table for a description of each bread and ingredient lists): order deadline Monday 5PM

WW, PdC, Pan marino, Walnut, 3-grain, Lemon & barley, Turmeric etc, Chocolate, Challah. 

Cinnamon swirls: £3 for 4 swirls 220g total; with pecan nuts £3.50 for 4.
Ingredients (allergens): wheat flour, milk, water, eggs, butter, honey, sugar, yeast, salt, cardamom, cinnamon, pecan nuts (optional).

I ran the Gruyère & olive bread at Xmas 2017 but didnt take a picture of my own so the below right photo comes from my school recipe folder. It's a tear & share yeasted bread baked in a 1lbs loaf pan which is good for picnic or as a quick lunch with a green salad (£5 per loaf).
Ingredients (allergens): wheat flour, water, yeast, salt, gruyère, olives, sesame seeds, sunflower seeds, olive oil.

Bread menu for next week (c/o 22 March 2021)

Evening all

I have loved offering specials most weeks since the start of 2021. It's been a great way to keep boredom at bay (mine and hopefully yours) and engage with you, my dear customers! It has encouraged me to try new things and be adventurous, which in turns makes me a more confident and rounded baker. Lessons learned in the bakery transpose well in life, one could say. Anyway no risk of a rut this week with 24 challahs baked on top of the normal sourdough output and a total of 70+ products coming out of the oven. This week's special was a simple idea suggested by a customer (danke schoen), I hope you'll like it. Because it's using a variant of an existing recipe I can offer it on all baking days.

Thursday: Wild West (standard and large size) and seeded Wild West (standard only), Rugbrod (half and whole).  Honey available with all bread orders (3 pots left, 2 runny, 1 set, do say which you want). 
Friday & Saturday: as Thursday plus Fig & Fennel, Poppy & sesame and (Friday only) my Cornish Saffron Bread. 

​Order by Monday 5PM please.

Housekeeping notice: there will be no invoices next week but all tab customers will be sent a final invoice for the FY in two weeks' time. Please can you settle it by Easter Monday as it's particularly important this year that I reset all tabs to zero by 6 April 2021.

Hello everyone

It was another interesting week coming on the heels of the previous one. I would like to apologise to my collecting customers this morning if I seemed distrated whilst I was waiting for a visit of the food inspector, NO LESS! All went well with said visit, which pleased me greatly although not as much as seeing the beautiful challah come out my oven on Friday and Saturday. Those of you who have known me for some time also know that the simple and understated challah is a bake that had so far eluded me. So it was no small victory when I managed to nail it and add it to this week's menu. I wont call it a special as I've already decided to add it to my Treats menu. 

Thursday: Pain de Campagne and Rugbrod in standard/half and large/full size.
Friday: as Tuesday, Wild West, Pan Marino, Raisin & Rosemary and Challah!
Saturday: as Friday but I can only take a max of 4 orders for Challah on Saturday.
Honey available with every bread order stock permitting (5 jars left).

Please order by Monday 5PM.

So much fun making challah on Friday. 17 on order +1 spare worked out as 3 x batches of 6. Batch # 1 was out of the mixer at 8:30AM but I didnt get batches # 2 and # 3 sorted out before 11:30AM and 1:00PM. Bakery was fairly warm by then which sped up the proving so that all challah work was done and dusted by 420PM. Kudos to Jules for delivering all those unyieldy loaves without spoiling them.

Dear all

It was an eventful week last week when all I could think about and talk about was cinnamon swirls. I'm glad I made them and I'm working on another yeasted treat but this week we are back with a bready special. It's back to school as well and I'm sure the week has lots in store for us folks with school-aged children!

Thursday: Wild West in standard and large size, Wild West Heritage with Khorasan flour (standard only), Rugbrod in half and full loaf.
Friday & Saturday: as Thursday (Wild West in large only) plus Pain de Campagne (large only), Barley & Ale, NYDR and the special is an omega-3 loaded Chia & Linseed levain (£3 for a standard loaf) as shown on photos below. It's a loaf that keeps well as it needs very high hydration because of the chias that act like little sponges.
Honey available with every bread order.
