ORDERS IN BY WEDNESDAY 5PM please For the remaining 3 weeks, I will bake Friday and Saturday only. I'm now exclusively using my larger oven as the AGA got turned down for the summer. The larger capacity means that I need to fully load the oven (5 loaves) at each bake. I think there are lots of my customers who are coming back from holiday and others going on holiday so I might have to swap your delivery day. I'll let you know if this is the case and if you are particular about a day then please do let me know. Four more weeks before West Street Bakehouse closes down for the summer so let's make the most of the remaining time. Wild West (remember that these are available in two sizes, large and standard) Wild West with Spelt 3–grain NYDR Walnut Olive & Rosemary on Friday only: Chocolate sourdough and my Lincs plum bread. All orders by Wednesday evening please, Tuesday evening for Thursday orders. As usual, if you have some flexibility on which days you want your bread then let me know as this is always helpful if I can group the orders in batches of the same bread. For the specials (Walnut and O&R) I will only be able to bake them if I have enough orders for each. This week and/or next I'll put some samples of Pain d'épices with your orders. If you have any allergies or intolerance to honey, some spices, or fresh citrus (although the orange juice will obviously be baked with the loaf), then do let me know. Wild West Tuesday: I'll bake an extra batch or more of Wild Wests for those of you wanting sourdough earlier in the week. For this to work I have to pare down the logistics: deliveries only (no collection), pay in advance by bank transfer or add to your bill for those of you with online tabs (no cash/card), bread to be left in a "safe place" (I wont knock on doors). This week we will have from Thursday to Saturday: Wild West with Emmer Wild West Poppy & Sesame Fig & Fennel NYDR and on Friday only: my Lincs plum bread. From next week onwards and until the end of July, I will be baking on Tuesday in addition to the normal baking days: this will be a simple bake of Wild Wests only. I'll call it Wild West Tuesday. Payments will be in advance by bank transfer at the time of ordering, and you will need a safe place for me to leave your bread (even if we have other arrangements on normal baking days). I'll bake first thing so the bread will be with you by mid-morning. If you are interested nothing to do now, you will need to order on reception of the weekly email this Sunday which will contain all necessary instructions! Enjoy the week! It's going to be wet, wet, wet! Dear all, I'm going to run the same menu as last week again next week so post below for what's on offer. Normal baking days: Thursday to Saturday and last orders by Weds evening (Tue evening for breads on Thursday). Slight change to how things work: I will need to have at least order for 4 breads of the same type for me to be able to offer that bread (not 4 breads from the same person obviously, 4 breads of that type in total for that week). So if I have too few orders for the bread of your choice I might need to come back to you on Weds night and ask you to swap it against one of the most popular breads of that week. It wont happen often but nonetheless please be warned and be patient with me! I've got a few more customers now and baking one loaf of one type for one customer just doesn't make any sense any more. First a big thank you to my dear customers who have treated me with orders for 28 breads last week, my biggest ever. A seasoned baker would laugh at my production since this is what a commercial bakery would output in 10 minutes but I am small, bake with no mixer and a 2-oven AGA so pat on the back me! This week we will feature the last of our 4 sourdough loaves with heritage grain: Wild West with Spelt and we will also bake: Wild West WW with 70% wholemeal, of which I do not want to change the name to avoid confusion BUT note that my recipe current makes this bread more like 50/50 white/wholemeal as new flour is a bit too weak for my recipe. But gosh if is a gorgeous one! Poppy & sesame: I have become a fan of poppy so might see more of this lovely seed in my bread (and my front teeth!) NYDR and Olive & Rosemary. And on Thursday & Friday: my Lincs plum bread. No bake next week, all back to normal in the first week of March i.e. c/o 4 March 2019. See you then!
Here is what is coming to you this week:
the 3rd of our weekly special featuring heritage grain: Wild West with Kamut, as well as B&W sesame NYDR Lemon & Barley Wild West and WW with wholemeal flour; I'm lowering the proportion of wholemeal to around 50% of total flour weight for the next few weeks as I've purchased a very good quality stoneground organic wholemeal flour but it's not strong enough to be used as the main flour in my recipe. Dont worry it is still pretty brown! And on Friday only: my Lincs plum bread.
