Next week's bake and the bake in two week's time will be my last. I'm giving you the menu for the second bake fyi in case you want to balance your orders between the two and/or have an idea of what will be on offer. Please only order by Tuesday 5PM for the coming week, ie for bake on 1 July. 

Friday 1 July: Wild West and Pain de Campagne (standard and large), Rugbrod (half and whole), Fig & Fennel, Poppy & Sesame, Challah and my Lincs plum bread. Ample supply of runny honey.

Morning eveyone

This is the menu for next week. Please order before this Tuesday 5PM. Note that I have had COVID and amd testing positive, eight days on. By this Friday, it'll have been two weeks since my first positive LTF, so I think I wont be infectious. But it's for you each of you to decide if you are comfortable getting bread for me.

Friday 17 June 2022: Wild West (standard or large), Rugbrod (half or whole), BW sesame, Olive & Rosemary, Challah and my Cornish Saffon Bread (price increased to £4.50 as I've realised I had aligned with more expensive butter!).

Please note that these are the confirmed dates for the next bakes. I've had to drop some as realised it'd be good to spend more time in France in July/August or just have more time with my family!

Next bakes: 1 July, 15 July, and last bake 12 August. Look out for popups after that.

Hello everyone and sorry for tardiness of the menu. Got caught out by sunny weather yesterday with too much to enjoy outside. I'll have a pretty simple menu this week with:

Friday 20 May 2022: the usual WW and PdC (either standard or large) and Rugbrod (half or whole), Poppy & Sesame, Fig & Fennel and my Lincs plum bread. Runny honey available too.

Please order before Tue 17 May @ 5PM. If you have missed the deadline, it's always worth emailing me in case I can squeeze in a late order. On bake day, you can also ask for spares. My system has plenty of leeway even though it's best to try and put your order on time!

I also wanted to tell you officially that I will stop baking in September as I'll become a full-time analyst again then. I dropped my full-time hours when my son was born in 2002 so after 20 years of part-time I'm now going back onto a more normal career (war)path!

We have plenty of bakes and opportunity to meet each other at collection time between now and then and I dont think this will be the end of WSBL as such as I'm still hoping I'll want to do a few popup bakes on Saturdays. But it's the end of the fortnightly bakes. It's been great baking for you and I'd never have the wonderful life I have in the village if it hadnt been for the bakery (as well as volunteering at the youth football club and going to the local gym). There's a lot to stay for community life in Comberton and I'm really proud to have contributed to it in my small way.

 Hello all and hope you are enjoying a restful Easter weekend. Sorry this menu is a bit late but here is what I'll be baking on Friday. Very low on wholemeal and rye flour until my order materialises hence the selection!

Friday 22 April: Wild West (standard or large), Turmeric, Nigella & Onion, 3-grain and My Cornish Saffron Bread. I still have a good supply of runny honey available with any bread order.

Dear all, here is the menu for the week to come. A bit late as I'm still in catchup mode from my time away earlier in the week. I've got no rye levain as I needed to start all over again. It might play ball by Wednesday, it might not so no Rugbrod I'm afraid and I'll make the Pain de Campagne on a wheat levain if it comes to that. Please order by Tuesday 8 March 5PM for bread on

Order by Tuesday 5PM please. Collection on the day will be from 5PM or earlier if your order is ready and you want to collect earlier. But by default, collection is from 5PM. I ALWAYS text you when your order is ready. If you havent got a text by 5PM do get in touch with me.

Welcome to the second bake of the year. This week I need to go to London so all breads will be put out for collection or delivered (for next door neighbours) by 2PM. I'll text when done. Apart from that, it's business as usual this week.

Friday 28 January 2022: Wild West and Pain de Campagne both in standard and large sizes, Rugbrod plain or with almonds and cranberries (for the last week) either as a half or whole loaf. Rugbrod with almonds and cranberries is £7 per whole loaf, £3.50 for a half one. Specials this week are 3-grain and Challah. Soft honey is back in stock. We will have to wait the spring for soft set as it needs warmer weather to be made.

Friday 15 January 2022: Wild West, Pain de Campagne (standard or large) and Rugbrod (plain, with almonds only, with almonds and cranberries, latter two costs £1 more for a whole Rugbrod, £0.50 for a half one). Olive & Rosemary and almond & caraway curls.
I've also got 2 jars of runny honey left. 

Remember: baking schedule will remain every 2 weeks in 2022.

Lemon & Barley (in limited quantities), Olive & Rosemary and both tyles of swirls / curls: cinnamon swirls and almond & caraway curls. I've also got a few jars of runny honey left.

Happy St Nicholas day tomorrow for those who celebrate and for eveyone here is the menu for next week, please order by TUESDAY 5PM: 

Friday 10 December: Wild West and Pain de Campagne (standard or large for £1 more - this is a reminder as it is in the bread description anyway), Black & white sesame, Walnut, Rugbrod (half or whole) comes in 3 variations pre-Xmas: plain, with almonds, with almonds and cranberries (latter two are £1 more for the whole one; as per bread description). Treat is my Cornish Saffron bread. Honey (runny only) is back in stock although not in huge amount. Price has increased to £6 per pot (to reflect my costs, not the producer's).

Early collection: the conventional pickup time will remain around 5PM. However if you are interested in an early collection (~2PM), say so in your order and I'll try to organise the bake accordingly; cannot guarantee it'll work as I need to bake at full oven but we can at least try . If you order the Cornish loaf, I wont have those done early as they always need the full day so they are not compatible with an early pickup. IN ALL CASES WAIT FOR MY TEXT!!!! If a text is not forthcoming, esp after 5PM, then nag me. We've had a few text failures, not many, but they happen.

Dear All

I've emerged well at the other end of my ear operation so feel that I can resume baking next week. I dont want to overdo it in the runup to Xmas though and ent's recommendation is 4-6 weeks at a slower pace so I'll bake on and off between now and Xmas. So baking days will be: 26 November, 10 December, 24 December. Next week, we will have:

Fri 26 Nov: Wild West (standard or large), Rugbrod (half or whole), Poppy & Sesame, Chocolate sourdough and Challah. Honey (only 1 runny left, 6 soft set) available with every bread order.

Please order by Tuesday 5PM.

Nice and early this time, menu for next week please order by TUESDAY 5PM thank you.

Friday: PdC (standard or large), Rugbrod (half or whole), Wild West Heritage (will do with khorasan and if I have too many orders for my small stock of that, will use spelt), Barley & Ale and I'll run those Almond and Caraway curls again as last week £1.75 each (see photos on last week's menu). They were hell to make under time pressure BUT I'm not giving up and intend to run the bake smoothly this week! Honey available with any bread order.

Remember this is last week before a one-week or two-week break (hopefully no longer) because of my op on 8th November (thanks for all your good wishes!).

Dear all, many apologies for the lateness of the menu which will be a mix of special requests including a repeat and a new thing. Please order by Wednesday 12pm noon (postponing normal deadline of Tuesday evening due to my own tardiness). Honey available as usual. 

Friday:  Wild West (standard or large), Fig & Fennel (that's the repeat from last week), 3-grain (that's the special request!), Rugbrod (half or whole) and the new bit is a Caraway and Almond curl  at £1.75 each for this first batch (that's after many test ones!), see photos below. Made with same dough as the cinnamon swirl but cardmamon swapped for caraway seeds and cinnamon butter for frangipane. Obviously not for people allergic of sensitive to ALMONDS! Dont let the caraway put you off, there's just enough of it to lift the almond taste with a slight aniseedy flavour.

Another nice and simple menu for next week whilst I continue testing new recipes.

Friday 22 October: PdC (standard or large), Rugbrod (half or whole), Pan Marino, Fig & Fennel and NYDR. Honey available with all bread orders (pls specify set or runny). 

Note: I will only bake NYDR if I get enough orders for it. If you order A NYDR, please give me a backup option in case I end up not baking any (backup option can either be: no substitution if no NYDR  OR it can be NYDR first choice, if not eg a Pan Marino or a small PdC etc. If you are a prepay customer and order NYDR, do wait until I've confirmed your final order before paying please.

Heads up: There will be 3 more weeks of baking including this coming week and I'll have a break in week c/o 8 November when I have an ear operation. I wont bake that week and will need to see how I recover to decide when I can bake again. This is quite a while away but letting you know in case you want to stock up on your favourites.

Morning everyone, a bit of an on the spot decision here but I've decided to call next week's bake off as I turn 49 on Thursday and would like to make the most of the last birthday of my fourth decade. So with my apologies there will be no bread this Friday, back to normal in week c/o 11th October 2021.

Hello everyone and welcome to my menu. A bit more variety as I have now a fully working yet young rye levain which I'll put through its paces in the coming weeks, starting next week:

Friday: Wild West (standard or large), Pan Marino, Rugbrod (half or whole), B&W sesame and Chocolate sourdough (contains Hazelnut as well as Soja because of chocolate). Honey (set or runny) also available with every bread order. 

Order by Monday 5PM please and remember that I've moved to collection only until further notice. Wait for my text on baking day Friday by 5PM, earlier if I can, before setting off so that your order is indeed ready to be picked up. Have a great week!

So the wheat levain did work out last week and so did my Wild Wests. Hurray! Now I just need to bring a rye levain back into life! This week, we will have a fairly white week again until I get my darker levain going so here goes...

Dear All

Thanks for your patience with me on this first week back and my epic fail on the Wild West front. As those of you who ordered WW this week already know, I had to bin 18kg of dough as things went completely wrong on Thursday. I think the starter that had been kept for a month and only refreshed twice got too weak and acidic. When I used it to build up the levain for the WW, the wholemeal flour in the levain supercharged the mix and I didnt catch it in time so it failed in the dough. All the other loaves which are on white flour levain went fine. 

So anyway, I wasnt going to bake this week as I have a training course on Friday in London but I've decided that in fact I'm going to try the Wild West again on Thursday. So this week is down to bare bones for those of you who missed out this week and those who are happy with Wild West:

ORDERING DEADLINE: MONDAY 5PM - baking day: THURSDAY and COLLECTION ONLY!
Wild West in standard or large size. That's it! As it's all I'll have time to do! You can also order honey if you want to.

We are back baking this week. I should say I am back baking this week as it seems that I've lost my delivery boy (more on that below). I hope everyone had a good break if you manage to go away.
This week we will have all sourdough on wheat-based levain as my rye levain died of neglect during my holiday (it's not the first time and it's easy enough to start a new one, I just need another week)

Baking day remains Friday:

Wild West (standard or large), Pan Marino, Fig & Fennel, Turmeric, nigella and onion. Honey also available with any bread order. 

Please place your order by Tuesday 5PM. From now on, Jules wont be helping me any longer in the bakery as he's got other activities on Friday night so if you can pick up your loaf that will be great. If you cant and your order is £6+ and you live in Comberton, I will deliver it to you as we used to.
