This is the menu for next week. Please order before this Tuesday 5PM. Note that I have had COVID and amd testing positive, eight days on. By this Friday, it'll have been two weeks since my first positive LTF, so I think I wont be infectious. But it's for you each of you to decide if you are comfortable getting bread for me. Friday 17 June 2022: Wild West (standard or large), Rugbrod (half or whole), BW sesame, Olive & Rosemary, Challah and my Cornish Saffon Bread (price increased to £4.50 as I've realised I had aligned with more expensive butter!). Please note that these are the confirmed dates for the next bakes. I've had to drop some as realised it'd be good to spend more time in France in July/August or just have more time with my family! Friday 20 May 2022: the usual WW and PdC (either standard or large) and Rugbrod (half or whole), Poppy & Sesame, Fig & Fennel and my Lincs plum bread. Runny honey available too. Please order before Tue 17 May @ 5PM. If you have missed the deadline, it's always worth emailing me in case I can squeeze in a late order. On bake day, you can also ask for spares. My system has plenty of leeway even though it's best to try and put your order on time! I also wanted to tell you officially that I will stop baking in September as I'll become a full-time analyst again then. I dropped my full-time hours when my son was born in 2002 so after 20 years of part-time I'm now going back onto a more normal career (war)path! We have plenty of bakes and opportunity to meet each other at collection time between now and then and I dont think this will be the end of WSBL as such as I'm still hoping I'll want to do a few popup bakes on Saturdays. But it's the end of the fortnightly bakes. It's been great baking for you and I'd never have the wonderful life I have in the village if it hadnt been for the bakery (as well as volunteering at the youth football club and going to the local gym). Runny honey available with every bread order. Order by Tuesday 5PM please. Collection on the day will be from 5PM or earlier if your order is ready and you want to collect earlier. Welcome to the second bake of the year. This week I need to go to London so all breads will be put out for collection or delivered (for next door neighbours) by 2PM. I'll text when done. Apart from that, it's business as usual this week. Friday 28 January 2022: Wild West and Pain de Campagne both in standard and large sizes, Rugbrod plain or with almonds and cranberries (for the last week) either as a half or whole loaf. Rugbrod with almonds and cranberries is £7 per whole loaf, £3.50 for a half one. Specials this week are 3-grain and Challah. Soft honey is back in stock. Happy St Nicholas day tomorrow for those who celebrate and for eveyone here is the menu for next week, please order by TUESDAY 5PM: Friday 10 December: Wild West and Pain de Campagne (standard or large for £1 more - this is a reminder as it is in the bread description anyway), Black & white sesame, Walnut, Rugbrod (half or whole) comes in 3 variations pre-Xmas: plain, with almonds, with almonds and cranberries (latter two are £1 more for the whole one; as per bread description). Treat is my Cornish Saffron bread. Honey (runny only) is back in stock although not in huge amount. Price has increased to £6 per pot (to reflect my costs, not the producer's). Early collection: the conventional pickup time will remain around 5PM. However if you are interested in an early collection (~2PM), say so in your order and I'll try to organise the bake accordingly; cannot guarantee it'll work as I need to bake at full oven but we can at least try . If you order the Cornish loaf, I wont have those done early as they always need the full day so they are not compatible with an early pickup. IN ALL CASES WAIT FOR MY TEXT!!!! I've emerged well at the other end of my ear operation so feel that I can resume baking next week. I dont want to overdo it in the runup to Xmas though and ent's recommendation is 4-6 weeks at a slower pace so I'll bake on and off between now and Xmas. So baking days will be: 26 November, 10 December, 24 December. Next week, we will have: Fri 26 Nov: Wild West (standard or large), Rugbrod (half or whole), Poppy & Sesame, Chocolate sourdough and Challah. They were hell to make under time pressure BUT I'm not giving up and intend to run the bake smoothly this week! Honey available with any bread order. Friday: Wild West (standard or large), Fig & Fennel (that's the repeat from last week), 3-grain (that's the special request!), Rugbrod (half or whole) and the new bit is a Caraway and Almond curl at £1.75 each for this first batch (that's after many test ones!), see photos below. Made with same dough as the cinnamon swirl but cardmamon swapped for caraway seeds and cinnamon butter for frangipane. Obviously not for people allergic of sensitive to ALMONDS! Dont let the caraway put you off, there's just enough of it to lift the almond taste with a slight aniseedy flavour. Another nice and simple menu for next week whilst I continue testing new recipes.

Honey available with all bread orders (pls specify set or runny). Note: I will only bake NYDR if I get enough orders for it. Hello everyone and welcome to my menu. A bit more variety as I have now a fully working yet young rye levain which I'll put through its paces in the coming weeks, starting next week:
Friday: Wild West (standard or large), Pan Marino, Rugbrod (half or whole), B&W sesame and Chocolate sourdough (contains Hazelnut as well as Soja because of chocolate). Honey (set or runny) also available with every bread order. Order by Monday 5PM please and remember that I've moved to collection only until further notice. Wait for my text on baking day Friday by 5PM, earlier if I can, before setting off so that your order is indeed ready to be picked up. Have a great week! So the wheat levain did work out last week and so did my Wild Wests. Hurray! Now I just need to bring a rye levain back into life! This week, we will have a fairly white week again until I get my darker levain going so here goes...

Thanks for your patience with me on this first week back and my epic fail on the Wild West front. As those of you who ordered WW this week already know, I had to bin 18kg of dough as things went completely wrong on Thursday. I think the starter that had been kept for a month and only refreshed twice got too weak and acidic. When I used it to build up the levain for the WW, the wholemeal flour in the levain supercharged the mix and I didnt catch it in time so it failed in the dough. All the other loaves which are on white flour levain went fine. So anyway, I wasnt going to bake this week as I have a training course on Friday in London but I've decided that in fact I'm going to try the Wild West again on Thursday. So this week is down to bare bones for those of you who missed out this week and those who are happy with Wild West: ORDERING DEADLINE: MONDAY 5PM - baking day: THURSDAY and COLLECTION ONLY! We are back baking this week. I should say I am back baking this week as it seems that I've lost my delivery boy (more on that below). I hope everyone had a good break if you manage to go away. This week we will have all sourdough on wheat-based levain as my rye levain died of neglect during my holiday (it's not the first time and it's easy enough to start a new one, I just need another week) Baking day remains Friday: Wild West (standard or large), Pan Marino, Fig & Fennel, Turmeric, nigella and onion. From now on, Jules wont be helping me any longer in the bakery as he's got other activities on Friday night so if you can pick up your loaf that will be great.
